I didn’t know there’s a lot of fish sauce variety. It’s interesting how different parts of Vietnam add their own unique twists (lemongrass and shrimp paste) to their fish sauce. I must admit, I thought fish sauce was mostly a Thai-thing. I know most people can’t stand the pungent smell, but once the sauce is in a dish you won’t even notice it’s there.
